Breakfast For Dinner

Good morning! I'm not really, actually a breakfast person. The only thing I crave when I wake up is 1. More sleep than I had, 2. Coffee, all of it. This leads to a bit of understandable confusion as there are 135 recipes on Smitten Kitchen under the Breakfast category but what's not abundantly clear is I'd be perfectly happy to eat them for lunch, and do most weekends, and that a whole lot of them work well for dinner, too, where they're also a nice change from the usual (seeing as the usual often includes a 5yo under the table, refusing to eat anything on top of it). Here are a few of my breakfast favorites that transfer well to a dinner meal, as well as a few brunch treats that were already knew were basically dessert, right? That's why we love them.

Fresh and New

New: Our quarantine cocktail of choice was this, a tweaked-until-perfect forever margarita: tart but balanced, just barely sweet. Fresh lime juice makes a huge difference here, and the chile-salt rim makes it feel almost, dare I say, vacation-y. Happy Friday, friends. I hope it's sunny and warming up where you are, too.

I realize the idea of a recipe (a recipe!) for avocado toast is bonkers but this one is truly the best classic version I've ever had, and I miss ordering it at the restaurant counter, I really do.

I thought making breakfast burritos at home would be a cinch but they turned out to be a staggering amount of work. This sheet pan method is 100% easier and I include instructions for freezing and defrosting because future you is so glad you made extra, it's weeping with gratitude.

A mammoth one-pan breakfast with the works (eggs, cheese, potatoes, spinach) that can be made well in advance and reheats well for days. Basically, it's kind of a breakfast miracle.

This frittata -- hearty with vegetables, unafraid of a little cheese -- is as delicious for a weeknight dinner as leftovers could be the next morning, rewarmed on a slice of toast, please.

Pizza for breakfast was already one a great thing but pizza *specifically formulated for breakfast* with bacon, runny eggs, and cheese is a gift we totally deserve this week.

A golden, crisp-edged pancake-shaped excuse to give new life to old potatoes. Could you put a crispy egg on top of them? Could you put cheese in them? Could you add more thinly shaved vegetables? Could you freeze them for future meals? Yes, yes, yes, and yes, and you should.

This is my go-to foolproof workhorse of a brunch dish, just bread, milk, eggs, spinach and all the cheese your heart desires but it is also extremely delicious for dinner, especially with a heartier sourdough or wholegrain bread.

Perfect with eggs for breakfast or soup for dinner, these are the butter, buttermilk, and baking soda biscuit equivalent of French onion soup, wound with caramelized onions and studded with diced bits of cheese, some which slip onto the baking sheet in crispy frico puddles as they bake.

Lemony, light and ever-so-crisp at the edges, these ricotta pancakes are finished with sauéed apples and I can hardly express how little we’d mind if someone came over and made them for us this morning.

Tiny doughnut-like muffins dipped in browned butter and rolled in cinnamon-sugar are what breakfast-dessert-meets-dinner-dessert dreams are made of.
