Hello Friend! How are you on this fine Friday morning? I hope well, safe and warm and enjoying a cup of something hot (or something cold, if that is you). The pugs and I are sitting here contemplating our day and sipping coffee. I'm thinking about making a peanut butter cake that the grocery store check out lady told me about last week. If it works, I'll share it with you! The pugs are hoping that I'll drop some on the floor. That's how our relationship works. This past week has been stressful. My youngest daughter is sick with Covid (she is having only mild symptoms) and the baby and daddy seem fine so far. Because we were exposed to her, we are quarantining as well. Thankfully, no sickness noted at our house as of yet. The solitude isn't much different than usual for the past year. You know how it is, I'm sure. But hey, guess what? I've had time for the kitchen, so let's get on with the FOOD! Do you know what sneaks up on me every single year? Easter! It's kinda tricky with the way it changes its date around. I'm generally aware that it is spring, and BAM there it is, right on top of me. This year, I'm ready though. I put together this article with some of our own family favorite spring dishes for smaller gatherings and I thought you might want to take a look at Easter Menu Ideas for 2021 Do you always cook Italian Sausage in a frying pan? Me too. But I find that it doesn't cook evenly and the casing bubbles up and grease spatters and it's generally kind of a pain. Then, I started cooking it in the oven and it changed my life! Well, nothing that dramatic, but it is a biggish deal. So EASY! And hey, while scrounging through my pantry ingredients (since we are staying in for 2 weeks), I found out that you can make pancakes out of muffin mix and they are DELICIOUS! So easy, fast and affordable too! Doctor them up with nuts, chocolate, berries.... I did blueberries. It's fun! Muffins Mix Pancakes. As you know, I usually cook from scratch, but for a FAST weeknight meal, this did the trick. Plus, they freeze good and make a quick "from the freezer to the plate" breakfast for mornings on the go. If you hang around the homepage of Loaves and Dishes sometime later this morning, I'll have my Peanut Butter Cheerio Bars up and running. Fast and YUM! Plus, not absolutely the worst treat for you in the history of mankind, so there's that. They are mostly cheerios and peanut butter, that's better than a lot of other ingredients. I mean, there's no kale in there, but hey, you could add some! lol. ______________________________ HOT COOKING TIP OF THE WEEK I have TWO cooking tips that I want to share with you. They are burning a hole in my oven, so to speak. I'll just have to save one for next week... This tip makes so much sense, I'm not sure why I didn't think of it myself. I read it somewhere in the past few weeks and it works great! If you have a pizza stone, store it on the bottom rack of your oven. The pizza stone will heat up with the oven, and helps regulate the temp inside the oven if you open the door during baking. It also shields the dish from the heat source and this will help with uneven baking. (slaps self on forehead) But of course! That makes so much sense! _____________________________ THANK YOU! If there is something that you need a video of, please let me know and I'll do my best to get it on there for you. ____________________________ THREE LITTLE THINGS I'm trying so hard to be more grateful in my day to day life. After some hard thinking, I've decided that when I'm unhappy with life or feeling that things are unfair or feeling paranoid or whatever my general negative issue is for the day, it often stems from not appreciating what I have and being grateful for the life I'm blessed with. I am truly so very blessed and lucky.
_________________________ A FINAL THOUGHT The ol internet, times are changing. You know those annoying "paywalls" that ask you to sign in to a website before you can look at the article? I've often thought, "I wish that google would make people get rid of these things". In fact, they aren't going away, instead you are going to start seeing more of them! That's because something called "third party cookies" is going away. Third party cookies are one of the ways that you (and I) are served up ads for things that we have been looking at on the internet. Due to privacy controls, those third party cookies are going the way of the dinosaur. That means, many more sites will require a sign in before allowing access to the site. (Its a convoluted path to understand this and I'm not sure that I entirely understand it yet either). But I want you to know, I'll try to make your perusing of Loaves and Dishes as easy and stressless as possible as these changes occur. I'll keep you updated to things as they happen and offer the best education that I can in my limited understanding of "all things techy". That's it for now.
