Here's your Meal Plan for the week! 😘

Hi there!

In case you missed it, I've been busy in the kitchen experimenting with oat flour lately. I've had so much fun learning how to use this gluten-free flour as a substitute for all-purpose flour in baking, and I'm sharing all about it in my latest posts this week.

One of my goals this year was to share a "main entree" type of recipe every week, but I was so excited about oat flour this week, that I missed my goal. Sorry!

Oat Flour Chocolate Chip Cookies. I took a classic chocolate chip cookie recipe and gave it a gluten-free twist with oat flour! In this video you'll learn an easy formula for substituting oat flour in your favorite recipes.

Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Creamy Arugula Soup and Arugula Salad with Raspberry Vinaigrette. Arugula is a green that I find difficult to eat sometimes, but these two recipes make this spicier green shine! This combo is the perfect way to use up a bunch at once.

Monday: Lentil Bolognese. This hearty pasta is my go-to when I want a lazier weeknight meal. My whole family loves it!

Tuesday: Mexican Cauliflower Rice Casserole. I created this recipe when I wanted a different way of serving cauliflower rice. It's so comforting! For a vegan version, try adding lentils instead of eggs, and use my favorite Nacho Cheese Sauce on top.

Wednesday: Curried Chicken Salad. This recipe is made with mashed avocado instead of mayo, and it's delicious over a big bed of greens! Try using chickpeas instead of chicken for a vegan version.

Thursday: Wild Rice & Mushroom Stuffing. This dish has holiday flavors, but it's too delicious not to enjoy it on a regular weeknight, too! For an even faster dish with extra protein, try using quinoa instead of the wild rice.

Friday: Smoked Salmon Salad with Dill Dressing. This dill dressing is addictive and will work over any other salad combination you love, too!

Saturday: Day off from cooking! (Leftovers or take-out)
