A season of simplicity in the kitchen, plus my new favorite lentil sandwich filling. ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏ ͏
This has been a season of simplicity in the kitchen. If meal prep gets done, it’s good enough. If something I make turns out especially well, or I find time to try something new, that’s a very welcome bonus. My packed lunch is leftovers some of the time and sandwiches the rest of the time. A lot of those sandwiches are PB&J. Nearly all the rest are mashed beans or lentils on bread. In case that doesn’t sound very exciting, I’m singing the praises of the humble mashed legume sandwich on the blog this morning. I’m also sharing the easy lentil sandwich filling that’s been my go-to lately. This sandwich, like two of my other favorites—chickpea artichoke "tuna"and garlic tahini smashed white beans—is easy to make, pack, and eat at my desk. What these sandwiches lack in glamour and visual appeal, they more than make up for in good nutrition, great flavor, and staying power. Head to the blog to read all about my latest go-to sandwich filling and the few key ingredients that give it so much flavor: pickled onions, mustard, and celery for crunch. Wishing you a grounded, gentle start to the week and a very happy Monday. xo |
