We're much more a chocolate yule log family, but it's till nice to have a traditional Christmas cake to offer to guests. With that in mind, how about a single serve Christmas cake – one mini cake that's just right for a fruit cake lover, or enough to be shared by two who just want a taste of the festive speciality? Not only is this a christmas cake for one but it's also dairy, egg and nut-free (and can easily be made gluten-free by subbing a GF flour blend plus a pinch of xanthan gum) so it should be suitable for most of your guests. If you don't want to use alcohol then apple juice works just as well. This recipe gives not only a perfect mini Christmas cake, but it's also made in minutes and can be cooked either in an individual cake tin or in a ramekin. So when that guest who loves Christmas cake (or indeed just fruit cake, because why would you use such a handy recipe only at Christmas) makes an unexpected entrance you can still have a gorgeous cake to offer. This little fruity cake is made with just a small bowl, a tbsp measure and a ramekin or small tin so you should be able to make a little cake for one almost anywhere π Single Serve Christmas Cake dairy-free, egg-free, nut-free, soya-free, sesame-free, vegetarian and vegan Serves 1 or 2 - ramekin or 1 small cake tin
- 2 tbsp alcohol of choice or apple juice
- 3 tbsp mixed dried fruit
- 1 tbsp dairy-free milk
- 2 tbsp soft brown sugar
- 1 tsp flavourless oil
- ½ tsp mixed spice
- 3 tbsp plain flour
- ¼ tsp baking powder
- Pour the alcohol or apple juice over the dried fruit and leave to steep for as long as possible, but at least 5 minutes
- Preheat the oven to 180 degrees C
- Grease a single pudding tin or a ramekin
- In a small bowl combine 1 tbsp of the alcohol/apple juice from the fruit mix with the milk, the oil, the sugar and mixed spice.
- Stir in the flour, baking powder and salt.
- Stir in the drained dried fruit
- Pour into the mini cake tin or ramekin and bake for 18-25 minutes (I've found using a ramekin takes a little longer) until the cake is risen, golden and cooked through
- Unmould (if using a tin) and leave to cool
- Dust with icing sugar or perhaps top with a thick water icing
- (if you make this ahead you can feed it with alcohol/juice but don't do that if you're eating it straight away as that is all you will taste!
