| I love a one pan dinner. This one takes about 1 hour total to make but it does have that one skillet advantage. Less dishes is always a win! The tender eggplant slices are lacquered with spicy harissa and then nestled in a fluffy pearl couscous base with shallots, warm spices, garlic, and vegetable stock. Chickpeas and baby spinach round the meal out and we top it off with fresh chopped mint, pine nuts, and dollops of vegan yogurt.
