We're driving out to visit my brother and his family in Colorado later this summer, and he's already reminded me several times to not forget his delivery of local Iowa sweet corn.
I told him only if he has a bushel of Colorado peaches waiting for us to devour! 😜
Iowa summers are synonymous with sweet corn season, and if there's a way to work fresh summer sweet corn into a dish, this Iowa gal will find it.
That said, trust me when I tell you the easiest way to cook corn on the cob is in the Air Fryer. This method is quick and hands off, plus the kernels come out tender, sweet, and slightly caramelized. It is SO good.
