The Ultimate Loaded Nachos | | SERVES: 4 TIME: 30 minutes INGREDIENTS 1 small red onion, thinly sliced pinch of sea salt 10 oz cherry tomatoes, halved 11 oz tortilla chips 4 oz piquillo peppers (from a jar), sliced 1 teaspoon smoked paprika To serve: 1 avocado, cut into small cubes 3 green onions, thinly sliced 7 oz tomato salsa (optional) | | METHOD 1. Place a pan over a medium heat and add a drizzle of olive oil. 2. Once warm, add the onion and a pinch of salt and pan fry for 10-15 minutes until soft. 3. Once soft, add in the tomatoes, peppers and smoked paprika and cook for another 5 minutes, stirring continuously, until everything is soft and juicy. 4.
