Ever get home at 5:30 and realize you need to feed yourself and your children and whoever else lives in your house before nighttime hits and oh, also everyone is super hangry? These recipes are the ones I lean on in these chaotic times. ๐ Most of them take just 15 minutes, use a lot of pre-made or pantry ingredients, and make it feel like you've won the weeknight dinner lottery.
#1: 15 Minute Lo Mein
"Made this for my family when they were visiting and every last bit was eaten up. Loved how simple, flavorful, and easy to use whatever vegetables you have on hand. It's definitely going into our regular rotation!" - Katie
"I made this last week as a quick weekend meal. I used homemade pesto. It was sooooo good. I'm planning to bring it to a girls weekend next! Thanks for an easy, throw together, awesome sandwich!" - Jennifer
"This is for real. It's every bit as tasty as actual fried rice – the good kind – and maybe even more so. And it is SO FAST. Using staple ingredients. And so healthy – it's a full-up salad that tastes like some of the best fried rice you've ever had." - PB
"Wow these tacos were so so good!! I added the the magic green sauce. They're just as good as brewery fish tacos in California that I gorge on every time I visit." - Jessica
"Made this for dinner, all the kids asked for seconds, even the picky one. Truly only took about 15 minutes, which I find to be unusual even when a recipe claims it's quick." - Allison
"This recipe is a new family favorite! Because we're in the newborn baby season of life, I made this even more SOS and just used a jar of delicious Rao's sauce instead of making the tomato sauce. So so good!" - Stacey
"Wow wow wow. I could leave it at that, but I won't. I made this for the first time last night and LOVED it. I love garbanzo beans, but even my garbanzo bean hating husband went back for seconds. The bang for your buck, both in time and actual $$, is incredible. I will be making this on a regular basis from now on." - Erin
"I made this for the second time tonight and boy was it perfect for a busy, rainy Sunday. It comes together so quickly and yet still feels like a real, hearty meal." - Lauren
"Decided to try these tonight, as I didn't feel like making anything complicated… and WOW! Will be coming back to this recipe again and again. So easy, and more importantly, so flavourful!" - Brittney
Happy (belated) Easter to those who celebrate! This week, it was time to review some Easter goodies. The rule was ONLY NEW SNACKS this year! Or ones we've never tried before. And it took us to some weird places.
