It's actually quite simple to get set up to make your own yogurt. As many of you, and our elders and the cooks before them have known, you need very little: milk, a deep pot, and . . . some yogurt. Yogurt is like sourdough bread in that it requires a starter to get it, um, started. I've been asked lots and lots about this and how the first yogurt must have been made without yogurt. The net of it all is that we're not going to get out of using yogurt to make our own yogurt!
So why not just buy all of the yogurt you need if you're buying some, instead of making it? Bunch of good reasons! Homemade yogurt is a special part of cooking in many cuisines, and very forward in Lebanese cuisine. Our laban (yogurt) and labneh (thick yogurt) are savory condiment, dip, and sustenance on the table.
