I wanted to share this Mexican Casserole recipe with you. This recipe is so easy to make yet all the amazing flavors and spices remain! It's an incredible weeknight dinner recipe or just a recipe to make in a pinch!

Mexican Casserole
Ingredients:
2 cups cooked brown rice, about 2/3 cup uncooked
2 tbsp olive oil
1 yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 pound lean ground beef or meatless ground beef
2 tbsp taco seasoning
2 tbsp chili powder
1 ½ tsp ground cumin
¾ tsp salt
½ tsp black pepper
3 garlic cloves, minced
1 cup frozen corn, thawed
1 cup plain nonfat Greek yogurt
1 15 oz can reduced fat refried beans
¾ cup freshly grated sharp cheddar cheese, divided
¾ cup Mexican cheese
1 15 oz can crushed tomatoes
Fresh cilantro for serving
Chopped green onions for serving
Directions:
- Preheat the oven to 350° F. Spray a 9×13 inch casserole dish with nonstick spray and set aside.
- In a Dutch oven, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper and sauté until slightly softened, about 5-7 minutes.
- Add the ground beef, taco seasoning, chili powder, cumin, salt, and black pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4-5 minutes. Then, add the garlic and corn and cook for an additional minute. Remove from the heat. Stir in the rice and Greek yogurt until evenly combined.
- Spread the beans into an even layer in the casserole dish. Sprinkle about ¼ cup of the cheddar cheese and Mexican cheese over the top followed by the tomatoes.
- Spoon the rice and ground beef mixture on top of the tomatoes, followed by the remaining cheddar and Mexican cheese.
- Bake the casserole, uncovered, until the cheese is melted, about 15 minutes.
- Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 minutes.
- Remove the casserole from the oven and let it rest for 5 minutes. Finally, add the chopped cilantro and green onions on top and serve!
