Have you seen my latest recipe for roasted red pepper sauce? Now it time to put that sauce to use in these delicious tacos.
There are so many vegetarian tacos one can prepare like bean taco, sweet pepper taco, cauliflower taco. I usually make bean taco in hard shell. I love both soft and hard shell tacos. It resembles with Indian food with spices and flavours. These tacos can be a quick weeknight dinner or weekend meal. Very easy to prepare and it can be ready in few minutes. I always make my own tortillas (gluten free) at home. Super easy to do. I also prepared roasted red pepper sauce at home. It turned out very tasty.
This recipe is gluten free, vegan and nut free.
This recipe serves 3 people.
Preparation Time: 10-15 minutes
Cooking Time: 15 minutes
Ingredients:
8-9 soft tortillas
Red pepper sauce
Lettuce chopped
Avocado (how to store for long time)
Cilantro
Cheese grated (optional)
Lemon juice
Roasted Cauliflower
1 head cauliflower cut in florets
1 tbsp olive oil
1/4 tsp smoked paprika or red chili powder
1/4 tsp cumin powder
Salt to taste
Procedure
1. To prepare roasted cauliflower, cut cauliflower in medium size florets. Then add rest of the ingredients and mix well.
2. Pre heat air fryer in Roast mode, 400F for 15 minutes. Once air fryer is preheated, add the cauliflower florets and lay it in single layer. If you have more, then try to do in batches.
3. Roast it and turn it on half way through. After 10 mins, stir if after every couple minutes to avoid it from burning. It took 15 mins in my Gourmia air fryer. Once ready, take it out in a bowl and keep aside.
4. If you are using store bough soft tortilla then heat for few seconds in a pan. If you are using fresh tortilla then spread red pepper sauce first, then roasted cauliflower, lettuce, diced avocados, cilantro, more sauce, cheese (optional) and squeeze little lemon juice over it. You can add chopped peppers, roasted corn or veggies of your choice. Once ready, serve it right away.
These tacos are super easy to do, fresh and delicious. The smoky flavors of roasted cauliflower, red pepper sauce takes it to the next level. This is the best plant based meal you can prepare in few mins. You can add or skip cheese per your choice. I kept it very simple.
