It feels like the minute we welcome fall, we also welcome busy schedules and earlier mornings. To get ahead of the morning chaos, I like to prepare as much as I can for weekday morning breakfasts over the weekend (or at least the night before!).

We love keeping homemade granola on hand - it's great for breakfast but is also a delicious after school snack. (Try my chocolate chip granola, too!).

Now, I know what you're thinking - make ahead pancakes? Yes! I try to keep a stash of pancakes in the freezer at all times. Reheat in the toaster or microwave and top with nut butter for an on-the-go breakfast.

While not a typical "breakfast" food, these granola bars are basically like a bowl of oatmeal, just in bar form.

Instead of plums, try apples, pears, or peaches.

Muffins freeze and thaw beautifully and these wholesome muffins are no exception! They're easily customizable to your tastes and preferences - try zucchini instead of carrots and use your favorite kind of dried fruit. (Triple chocolate muffins and apple cinnamon muffins are other favorites!)
