We've arrived (!!) at chunky sweaters, apple cake in the oven, and chili on the stove. We have a 55-degree breeze coming in through the open window, the smell of an early evening bonfire, and colorful leaves all around us. It's magical. It's why we love Minnesota.

Sesame Apricot Tofu
This is my latest tofu obsession, and the best part of this recipe is that you get to pull the tofu apart with your hands! No, wait, the best part about it is that you get to eat it in all its saucy, sticky, crunchified glory. The cornstarch coating makes the tofu fry up extra crispy, and then the quick savory-sweet apricot sauce goes right into the hot pan to sizzle, swish, and transform those little tofu nuggets into something that kind of resembles takeout Asian-style fried chicken. But in a distinctly different and tofu-y way? I love this with rice and buttered, salted green beans (my girls are VERY into green beans right now so we're going with it), but you can keep it even more SOS by just throwing some spinach into the pan at the end! Time savers FTW!

Harissa Meatballs with Whipped Feta
This one was your favorite recipe from our past SOS series! The harissa mixture takes store-bought meatballs and makes them into something zippy and fun, and the swoops of whipped feta to balance it all out? If you know, you know.
Trust! That creamy orange chipotle sauce is so mysteriously delicious, and it goes great with a little fresh cucumber salad if you have any end-of-summer garden cukes waiting for their moment to shine! This was my favorite from our original SOS series back in 2021.

Never not craving these easy sandwiches, and they're great for a busy weeknight. The beef itself is tender and delicious, and when you pile it on crusty bread and cover with melty provolone and crunchy giardiniera, it becomes Sandwich Hall of Fame material. Deep Dish Cookie Bowls for Two
Perfect for when you definitely do need a chocolate chip cookie, but you don't need a whole batch, but DO NEED A COOKIE (which is, honestly, always). These are just begging to be eaten cozied up on the couch with a thwap of melty vanilla ice cream on top! Ultimate treat-yourself material.
