NEW! Crunchy Jicama Slaw (1 Bowl!)

Crunchy jicama slaw tossed in a zesty lime-balsamic vinaigrette! Fresh, flavor-packed, and incredibly versatile (great for tacos, bowls, and more!).

Jicama deserves some more love! Not only is it crunchy and delicious, but it's rich in vitamin C, potassium, and a prebiotic (called inulin) that helps support digestive health!

So, we dreamt up a slaw using this nutritious, underutilized veggie and couldn't be more pleased with the result! It's FRESH, bright, tangy, and quick and easy to make – just 9 ingredients, 1 bowl, and 30 minutes required.

This slaw is the perfect side for summer  and beyond! Try it in tacos (recipe coming soon!) or paired with our Black Bean Plantain Enchilada Bake, Sweet Potato Black Bean Tamales, or Easy 1-Pot Black Bean Soup. Enjoy, friends!
