Here's your Meal Plan + Ice Cream Bars! ☀

Hello there,

I'm continuing our summer trend with more ice cream recipes! This week I have two fun ones for you. Vegan Ice Cream Bars, with a crunchy chocolate coating, and Pistachio Ice Cream, which is made with only 4 ingredients.

Here's What You Missed

If you haven't visited my website this week, here's what else is new:

Creamy Cajun Pasta. I love this creamy, Cajun-inspired sauce! It's such a fun change of pace for pasta, and you can use up any veggies or protein you have on hand.

Easy Coconut Macaroons. If you loved the chocolate version I shared a few weeks ago, you'll love these, too! All you need is a few simple ingredients, without using eggs or flour.

Vegan Pistacio Ice Cream. Just 4 ingredients create such a creamy, dairy-free ice cream! It has the maximum pistachio flavor, and I love adding in some chopped pistachio for extra crunch.

Ice Cream Bars. This is an old recipe that was updated from a "klondike bar" to an ice pop, so it's easier to eat! I love the 3-ingredient chocolate coating, and the creamy cashew ice cream inside. Feel free to use my coffee ice cream instead, for a mocha-flavored bar.




Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!


Sunday: Creamy Cajun Pasta. This is total comfort food, and you get to control the spice level! The leftovers are easy to reheat the next day, too.

Monday: Cowboy Caviar. This bean salad is so flavorful and filling! You can serve it on its own in a bowl, or in lettuce cups for a handheld wrap, or with a side of cooked grains and veggies. If you haven't tried this one yet, it's also a huge hit at parties!

Tuesday: Instant Pot Butter Chicken. I love how the Instant Pot cooks the meat and rice all at the same time, for a totally hands-off meal. For a vegetarian version, you can swap canned chickpeas or green jackfruit, that has been well-rinsed. The sauce is already dairy-free as written!

Wednesday: Tofu Scramble. Do you love breakfast for dinner? If so, this scramble is a must-try. It takes just a few minutes to make, and I love serving it with roasted potatoes on the side.

Thursday: Vegan Mac n' Cheese. Total comfort food, that takes less than 20 minutes to prepare! Serve it with a side of roasted veggies and a salad with vegan ranch dressing.

Friday: Salmon Curry. This recipe tastes like your favorite take-out, only better! You can use up any veggies you have in this dish, and serve it over rice, quinoa, or cauliflower rice.

Saturday: Day off from cooking! (Leftovers or take-out)




Breakfast Inspiration


Zucchini Oatmeal. This tastes like Zucchini Bread, with a lot less effort! It's a great way to sneak more veggies into your morning.

Oat Flour Pancakes. These are currently my favorite pancakes. I think they taste just as good as the kind you'd get at a restaurant!

Banana Overnight Oats. Basically like banana bread, only in a bowl. And there's no need to turn on your stove or oven!

Chocolate Granola. Everyone has been raving about this recipe! If you love chocolate cereal, this one's for you.

Chickpea Pancakes. Try these savory pancakes, for a different spin on breakfast. I like them topped with sliced avocado and salsa!
