Happy Monday Friends!
Well, I was in my garden today and I noticed the first zucchini of the season popping up.
I stood up, squinted, and quietly announced, "IT IS TIME".
Now if you grow zucchini you'll know that once it starts, it comes in hot and heavy for the next several weeks. The tiny little flower it was yesterday will turn into a giant baseball bat tomorrow.
So I've armed myself with a bunch of recipes to get through the zucchini explosion and this one has got to be my favorite:
Death By Chocolate Zucchini Bread.
That's right. It's zucchini bread that tastes like chocolate cake--except you can eat it for breakfast. Want to know why?
Because IT'S HEALTHY!
No foolin'. It's made with 100% whole wheat flour, unsweetened cocoa, maple syrup + applesauce for sweetness, coconut oil for healthy fats, and a load of fresh zucchini.
Heck, you can even make it dairy-free if you use lactose-free chocolate chips!
It's the kind of treat to start your day off right AND that you can give your kids--without them knowing it's good for them.
It freezes well, uses a full zucchini, and tastes OVER THE TOP DELICIOUS.
