Hello Dear One! While scanning through my own homepage, I'm starting to think that ya'll are going to suspect I've gone peanut butter crazy over here. I haven't. I'm not even the hugest fan of peanut butter BUT I have had some issues with dairy lately and I'm finding that peanut butter is a way to add some creaminess and flavor to things without adding dairy. So..... that's part of it. Plus, I bought 6 HUGE Sam's club size jars of peanut butter about 6 months ago and I started to panic over using them all up before they expire. No worries, I've worked through most of them. Now my pants are tights, so there's that. You might find more steamed veggie recipes in the coming weeks. lol. Awwww... come on now, you know better than that! We are ALL ABOUT COMFORT FOOD and the basics of learning to cook over here! Which brings me to my next recipes, LETS GET ON WITH THE FOOD! First, this Peanut Butter Cake that is topped with Peanut Butter Cream Cheese Frosting. Holy Smokes, talk about a surprising good taste! The cake is light and fluffy with a delicate peanut butter flavor. The icing is creamy and tangy and oh my! The check out clerk at the Food Lion is the one who got me thinking about this and it took me a couple of tries, but hey, I worked out the kinks and here it is! This will be a perfect cake for Easter or for any cookouts you go to. Works equally well in a double layer cake or in a 9x13 pan! Give it a go! Since it's SPRING, finally, you'll be seeing a lot more grilling recipes from me. Have you tried cooking veggies in foil on the grill? (You can cook them like this in the oven too - or even in the crockpot - the grill just adds some smoky goodness). Here, I've got green beans in foil, but you can do most any veggie this way and it is DELICIOUS! (plus easy! Plus, no mess!!). This foil grilled salmon is a hit too! If you served with the green beans and some mashed potatoes you'd have a delicious meal! ______________________________ HOT COOKING TIP OF THE WEEK I guess you've figured out by now that besides peanut butter, I'm pretty excited about the grill lately. Thought I might share my favorite tips for perfectly grilled burgers every single time.
________________________ THREE LITTLE THINGS I'm trying to be more thankful in my day to day life and thought that maybe if I share some small things I'm thankful for that you might also be reminded of what you are thankful for.
____________________ A FINAL THOUGHT Guess what? This week I got SO MAD at someone on social media. I typed out a VERY LONG and ANGRY message in response to what that person had said. I really wanted to clang that person over the head with a heavy message for what they had said. Then, something popped into my mind, the saying, "You will never look into the eyes of person who God doesn't love". I hit "delete" to my entire tirade. I had to think long and hard to figure out a way to both say what I wanted to say and to do so in a loving way. If God loves them, I can at least do my best to be kind (even when I don't want to). Perhaps that person looks at me and says, "Oh, that's how a Christian acts?" Yea, I don't want to be the negative example. Better to just not say anything at all than to be a negative example of God's love. Isn't that the essence of what my mom used to tell me, "If you can't say something nice, don't say anything at all". Just thought I would share some of my own struggles.
