The week is already in full-swing here. And I imagine it's as busy for you as it is for me. Sometimes, so busy that you can hardly catch your breath, you know?
On weeks like these (every week?), it's always nice to have a simple, flavor-forward dinner recipe in your back pocket. Something you know your family will love, and that you can put together pretty quickly.
So, I wanted to share one of my family's favorite dinner recipes. It's a Garam Masala Chicken Curry, and it comes together in about 45 minutes.
It's actually one of the most popular recipes on the site, too.
Here's why you should give it a try:
- It's flavor-forward. I like to use the Garam Masala blend from Pure Indian Foods, because it's packed with a wide array of nourishing spices. It's complex, but mild so my heat-averse 4-year old still enjoys it.
- It's versatile. I like to use chicken thighs in this recipe because they're both more nutrient-dense and flavor-rich than breast meat, you can vary the protein as you see fit.
- Coconut milk gives the curry a luxurious richness while ghee gives it a dose of nourishing, healthy fats.
