Matzo Brei Is Meant to Be Messed With
This is not my grandma's matzo brei.
Nor is it my mom's. Because just as every Jewish family makes this few-ingredient, few-minute Passover recipe a little differently, each of my relatives has their own strong-armed opinion, and I'm no different. I seek out whole-wheat matzo for nuttiness, double the number of eggs for bulk, and increase the water for a cloud-like fluff. But the biggest difference is what happens to the butter.
