So here we are, quarterly I guess, with hopes to keep it monthly. March eh? Anyone having flashbacks to this time last year? One day the kids went in with lepruchan traps and never went back to school. On a personal note, we had a big family shift in the start of this year. Hugh (beloved husband/work partner/former wedding photographer but still food and ocean photographer) started a new job as a front end developer at a software company. We'll continue with all things SK Cooking Club, I'm working on a proposal for a longggggg overdue cookbook, we are starting some construction (ideally early next month) on our home to provide a bit more kitchen/dining space, and the kids are a wonderful age (5 and almost 7) - I'm really enjoying this season with them. We had some rough spots with the quick change of well, everything, through the past year, and things feel lighter, or maybe just different lately which is nice too. I think of so many of you fellow parents juggling the state of things. Some days it feels like I can keep most of the balls in the air, and other days I cannot. I hope that currently, after this past wild year (YEAR!) you're seeing some of the buds and blooms from your growth. It's been hard for so many different reasons, but I think it's been clarifying for a lot of us as well. Anyway, here we are. Included are a few things I'd mention to you were we friends on the bleachers at a Tball game, chit chatting about life things. I'd probably have a little citrusy tequila cocktail in a repurposed jar and have brought you a slice of the cake I tested earlier that day. Glad you're here. xo | I've been doing some thinking on meal prep stuff, as cooking fatigue has come up a lot in my SK Cooking Club community. If I do a few things to get ahead on weekends, maybe one breakfast item, a soup that can sit all week, and whizzing or shaking up a couple sauces, I can get a leg up on dinner on weeknights. A sauce can make a simple meal of roasted vegetables and chicken a bit more exciting. Here is what I put in my green goddess last weekend that we had with some roasted potatoes (if you don't do dairy, a plain coconut yogurt works!): | Green Goddess2 cloves garlic 2 anchovies, optional 2 Tbsp. capers, drained 1 cup of basil 1 cup parsley few sprigs of dill or tarragon 2 scallions, trimmed 6 oz. (2/3 c) whole Greek yogurt 2 Tbsp. extra virgin olive oil 1 Tbsp. champagne vinegar zest and juice of a lemon (4 Tbsp.) dash of cayenne pinch of sugar 1 tsp. sea salt fresh ground pepper | Also, over on the blog, before the weather warms, get to the Cauliflower Bolognese, it's delicious! We're pushing out a lot of recipes for SKCC but these Vegetarian Enchiladas were a quiet hit. You make a spiced cauliflower and bean mixture that gets rolled up with whatever cheese (I love goat in enchiladas because a little goes a long way) and sauced. Homemade or store-bought enchilada sauce, and then gussied up with all the toppings. Always toppings! Have I already mentioned how frequently we make Jenne's Vegan Chocolate Sweet Potato Muffins? I can reduce the sugar and my kids still think they're getting cupcakes for breakfast. I love them split and toasted, with my second cup of coffee. Also, these Banana Bread Cookies. Oh! And a few new excellent cookbooks in this month! Zoe Bakes Cakes is GORGEOUS and informative without being overwhelming. I am not a big baker but I love having one book to turn to for special birthdays and such and this is the one. Also, ever a fan-girl of Heidi Swanson, Super Natural Simple is out today and the recipes are short and sweet and full of that magical healthy but unique Heidi touch. | I just finished Anxious People. Just as my girlfriend who recommended it told me, stick with it, it gets better. And it did. I found the story a bit jumbly but enjoyed the characters and overall depth of the message. I also finished Beach Read and loved that - easy, end of the day sort of book. Now into American Marriage (also loving!) and then The Great Alone.
We are late to this book, because my kids were too young to read it when it first came out. But we read Wonder together and watched the movie. I was in tears multiple times, which then upsets Cleo, who kept checking on me. They are both great, thoughtful kids, but it's a good story about how we're influenced by the people we spend time with at school and how hurtful words can be. I often don't know how to speak to my kids about the terrible shootings and hate that happens in our country, but having characters and examples from books, helps me anchor the WHY we stick up for people who are being treated unfairly. Another recent IG follow for me is @sharonsaysso and I'm learning some things I probably should have picked up in high school-ish but was more concerned with my cheerleading moves at that point in my life. I am over the inflammatory, one-sided news stories and opinions and am enjoying simply learning about the subject versus feeling like you have to pick a side and fight.
| One of the best things I treated myself to last month was a Dream Session with my friend and incredible therapist Elyse Snipes. Not sleeping dreams, like your-best-life dreams. We spent our time dumping my hopes and goals and road blocks onto the wall and sorted through for action steps, how I get in my own way. We narrowed down what I can do to move towards projects and life goals I well, dream of :) Can't recommend this enough.
Hugh got me these fancy Lunya pajamas for Valentines day and they are butter soft and beautiful on. Not that I've done more than try them on because it's freezing in our drafty, uninsulated house BUT I know I will love them even more when I wear them longer than 2 minutes. From the gal who still wears hand-me-down concert t-shirts and Old Navy sleep shorts from 2002, the hint for an upgrade of evening attire was noted and appreciated. My gut is a little wonky and therefore my skin reflects such. I've been trying different moisturizers and I keep coming back to this one for the evening. I wear this one with spf in the morning, and the Primally Pure one at night. I also love the smell. Just a thin coat so it's not greasy. I have a code for PP which is SK10 for 10% off.
