Here's your Meal Plan for the Week! ๐Ÿ˜˜

Hi again!

In case you missed it, it's been a week over here in the Gilmore home. Our pantry was invaded by pantry moths a few months back, and it has felt like a never-ending battle to make our kitchen moth-free again.

I will spare you the full details, but you can see photos of the process over on my Instagram or Facebook stories today, if you want to learn more about what is involved in clearing out a moth invasion, and how to prevent one! It's a lot of work, and set me back a full day on the Spring Reset, which is supposed to be coming to you very soon.

Socca Pizza. This is one of my favorite plant-based recipes to meal prep! As written, this recipe makes 2 servings, but you can double or triple it to make more for fast lunches this week.

Here's What You Missed

If you haven't visited the website this week, here's where you can grab the printable recipes and all of my substitution notes:

Salmon Curry. This recipe is an old one that recently got an update! It's perfect for anyone who needs more fish ideas during Lent, and you can add any other protein you like to this flavorful sauce, instead.

Peanut Butter Chickpea Cookies. Since I still have quite a bit of chickpea flour to work with, I decided to make a batch of chickpea flour cookies that don't taste like chickpeas at all! These cookies will blow your mind. They are crispy on the edges, and chewy in the middle, and I've included substitution notes directly in the post if you need them!


Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help, if you don't want to mess with the new shopping list option I mentioned above.

Shopping List: You can also view this week's meal plan here, and create a shopping list for it with the press of a button. Any customization you make will save to the browser you're using, so be sure to use your phone if you want to take it with you to the grocery store, or use the convenient "print" button to save your work.


Sunday: Easy Miso Soup and Sesame-Lime Cabbage Salad. Two flavorful recipes all in one meal! The Miso Soup is made with mushrooms instead of tofu, but you can use any ingredients you have on hand.

Monday: Chickpea Salad Sandwich. This satisfying sandwich reminds me of egg salad or tuna salad, but it's entirely plant based. It's delicious with your favorite bread and veggie toppings, or as a salad topper.

Tuesday: Slow Cooker Chicken Tacos. These have quickly become a go-to in many households, because of the sneaky serving of veggies inside. They are a hands-off meal, and if you want a vegetarian option, try these Vegan Tacos instead.

Wednesday: Mediterranean Salads with Socca bread. I usually make this salad in mason jars for meal prep, but they are also delicious when you make them fresh. Serve with a side of gluten-free flatbread for a filling meal.

Thursday: Vegan Pad Thai with Crispy Baked Tofu. This meal is so delicious, I think I could eat it for the rest of time! You'll love how many veggies are packed into this noodle dish, and the baked tofu adds extra protein, if you need it.

Friday: Salmon Curry. If you eat fish on Fridays, this is a delicious recipe to add extra flavor and veggies! You can use any fresh produce you have on hand in this one, and if you don't eat fish, feel free to use any other protein you like.

Saturday: Day off from cooking! (Leftovers or take-out)
