Everybody LOVES This Healthy Carrot Cake

Hey there reader,

One of my favorite dessert recipes to make is carrot cake. The warm cinnamon and nutmeg flavor, moist texture, and cream cheese frosting are what Spring dreams are made of. I look forward to making it every year for Easter.

This carrot cake recipe has been taste tested by:

  • My mom (who's an expert year-round carrot cake eater).
  • My mother-in-law (who also loves carrot cake).
  • My dad (who has zero filter and will tell me if it's horrible).
  • My husband (who wears his thoughts on his face).
  • My kids (who also have zero filter and will tell me exactly what they think).


Guess what? Everyone that tries it LOVES it.

What's even better? It uses healthier ingredients, and nobody has a clue. I wouldn't say it's the most nutritious carrot cake recipe out there, but it uses wholesome ingredients without compromising texture or flavor.

At the end of the day, it's a dessert recipe so enjoy in moderation.

As a bonus, you can freeze this carrot cake. If by some chance you have leftovers, then portion them out in small slices, wrap them in plastic wrap, and freeze for a sweet snack later on.
