🐓Chicken soups + Tteokguk + 🍜Kalguksu are all connected!

I was so ready for spring 🌸 this week but we got more cold temperatures and rain ☔️😔.. But I went ahead and bought some tomatoes and Jalapeno and Anneheim chili pepper plants 🌶 and planted them in the garden anyway. They loved the rain I'm sure.

 

I think I shared couple weeks ago that I planted some seeds of Korean chili peppers, Korean Daepa (leeks), Perilla, Korean cucumbers and squash. They have not yet sprouted - probably due to the unusually cold weather we are having. My husband has been doing a lot of yard work recently (thank you husband) and he keeps telling me he feels a bit run down and tired.. (anything to get my attention,.. haha 😝). And whenever that happens, I make Baeksuk or Samgyetang - because it just seems to always help him recover.

 

PICK ME (HIM) UP SOUP

So I made Samgyetang earlier in the week. If I use 1 cornish hen, that's usually a perfect amount for 2 of us to share but this time, I also wasn't feeling too energetic (I think the summer time is kind of affecting me) so I decided to make it with 2 cornish hens so I could use the 2nd one for Tteokguk the next day. If using regular chicken, one young, smaller chicken will totally be fine.

 

Hope you are all doing well wherever you are. And if you feel like you need an energy boost, try making some Samgyetang (Chicken Soup with Ginseng). Chicken is a warm food so it will warm you up and will give you energy!💪🏻

 

NOTE about GINSENG

If you have never had Ginseng before, you should try a little bit to make sure you are not allergic or have over-reaction to it before adding it to the soup. By over-reaction, I mean, if you have a very warm body type or have high blood pressure or whatever, you may feel extra hot and flushed after eating Ginseng. If this happens, you should probably avoid having Ginseng since Ginseng can make you too warm which may not be good.

Samgyetang 삼계탕 is a chicken soup with Ginseng and other herbs

  • simply add American or Korean fresh or dried Ginseng, jujube dates and no other herbs
  • buy samgyetang packets from Korean markets which contain various herbs but often they actually don't have ginseng in them.. sigh..

Baeksuk is a chicken soup WITHOUT Ginseng 

  • this is such an easy chicken soup to make. Just make rice and have kimchi, then it's a complete meal
  • make extra and use broth to make Tteokguk or Kalguksu (see below)

You can also add Black Garlic to make it extra yummy. You can buy Black Garlic from Korean or other Asian stores or from my Amazon shop HERE.

FYI - Black garlic is garlic that is naturally cured for 4 weeks or so and it naturally turns black as it dries up, cures and condenses. It is known to have great health benefits not to mention the wonderfully sweet flavor. Unlike regular garlic, black garlic is sweet and mild like balsamic vinegar. It adds great sweet flavor to soups. Here's how it turns out when you add it.

I don't have an exact recipe but you can certainly make a very yummy Tteokguk (rice cake soup) using leftover Chicken meat + broth from the soups that you made above. 

 

Use the chicken broth in lieu of anchovy broth in this recipe and then instead of adding ground beef on top, just tear up some chicken meat and season it or just add it plain on top. It's so yummy!!

Have you made my Kalguksu (Knife Cut Noodle Soup) yet? 

If you haven't, you are missing out!! 

In the recipe, I also show you how to make fresh noodles at home (if you want haha.. or just buy packaged fresh noodles from the store) so you have to try it.

Anyway, my recipe uses Anchovy Broth - but you can totally make it with Chicken broth and chicken meat. Just substitute chicken broth and top it with chicken meat at the end.

Another dish I made this week was Kimchi Jjigae! But instead of pork (as in my recipe), I added canned tuna instead. That works great too when you don't feel like having more meat.. Try it!
