In the fall and spring, we go mushrooming - which is to say that my kids and I head into the woods and start picking. You'll find all sorts of treasures there, if you know where to look (and what to look for).
Then we take them home, brush away the dirt and debris and make this soup. It's savory, and enriched with cream and herbs.
But, here's the thing: you don't have to use wild mushrooms (store-bought are fine). And it's a million times better than anything you'll find in a can. ❤️
Here's why you should give it a try:
- It's simple and delicious. There's a savory broth rich with mushrooms and spiked with fresh thyme. A touch of wine and swirl of heavy cream finishes the soup.
- Mushrooms support immune health. While some mushrooms are more medicinal than others, all mushrooms contain beta-glucan - a micronutrient that supports gut health and your immune system.
- Bone broth gives a boost of protein. Broth is rich in gelatin, which supports the joints, skin, and hair.
