The Five Types of Dinners You Need.20 easy meals, plus - the most amazing buffalo chicken salad I’ve eaten for lunch every day this week.
I have so much goodness here for you today! With the next 12ish weeks ready to fly by and simultaneously smack us in the face, I’m coming prepped with dinner. All the dinner ideas! You already know about my weeknight meal list and those back pocket meals that I keep on hand, but there are some very specific dinners that I always know will come together fast. And most of them were made for this season. Cozy season! Something satisfying and hearty that really makes the house smell incredible while filling everyone up. Dishes that are packed with flavor but ones that don’t require a ton of brainpower, since you’ve been doing all the things this week and can’t add one more to your list. This is what we’ve got! The five important types of dinners for your fall menus - and you can pick and choose between the 20. Copy and paste this into your notes app so you always have it. Chances are, many of these ingredients will live in your pantry and freezer so you can come up with this quickly on a busy night! THE PASTA DINNERThis is the super fast, throw together kind of pasta dinner. The one where you could add a quick protein if you wish, but it doesn’t need it. The one that you can make late at night when you’re hungry or in a pinch for a weeknight dinner. Lemon & brown butter toasted ravioli Garlic butter parmesan noodles Burst tomato pasta with chickpeas Weeknight spinach baked gnocchi THE SHEET PAN DINNERIf you have followed my blog, you know that I don’t love sheet pan meals. They have to be REALLY good in order to work - or you have to add ingredients to the sheet in different time increments so it all cooks evenly. Still, there are definitely ones that I keep in my rotation for easy meals. Sheet pan maple sausage, squash and brussels Sheet pan chickpeas and sweet peppers THE BUILD YOUR BOWL DINNERWe love this method because it’s so incredibly versatile. You can always add (or subtract, if you’re my kids) to the bowl - if you have a rotisserie chicken on hand, throw some in! If you have leftovers, add them in too. Golden cauliflower chickpea bowls THE PANTRY/FREEZER DINNERAnd no, I don’t mean just defrosting a meal. I mean using some of your favorite things from the freezer (and/or pantry) to make a dish come together fast. Frozen tortellini or gnocchi. Frozen fries for burger bowls. Crispy chicken for quick salads! Things like that. Tortilla pizzas with pepperoni chickpeas Tomato orzo soup with cheddar toasts Weeknight peanut noodles with roasted broccoli THE ONE POT DINNEROne pot meals can also be a hard sell for me, so they have to be done right! I only have a handful of ones that I truly adore, so it’s easy to grab from those and make one. They come together really fast and are super easy. One pot smoked sausage and rice One pot garlic butter shrimp and orzo Buffalo Chicken Saladaka My New Favorite Lunch… I’m a chicken salad snob and this buffalo chicken version is top notch. I like my chicken salad very briney and tart, and the wing sauce does a great job of replacing some lemon juice and tangy yogurt here. Think: weeknight football snacks with crispy buffalo chicken, but it’s your workweek lunch. I love making this on Sundays and having it on toast or even with crackers during the week. Delicious!...
