Make one recipe, or make them all! You can easily swap the recipes in and out for the days of the week that work for you.
This soup can be kept warm in a slow cooker for several hours - if doing so, keep in mind that the soup will thicken a bit as the noodles absorb more broth so undercook the noodles just a bit if doing so or add additional broth.
This casserole can be assembled and refrigerated early in the day to bake later when needed. It's delicious served simply with fresh fruit (since it includes cheese, carbs and veggies already!).
Leftovers of these lentil tacos freeze great to reheat for a later meal. There are some crossover toppings (lettuce, tomatoes) with the cashew lettuce wraps, so use that to your advantage/plan accordingly.
