Hope you had a really lovely Thanksgiving! Mine was filled with lots of good food, family, mocktails, and delicious sweets.
If you're feeling a little tender after the holiday whirlwind... same. The fridge is a weird mix of leftovers, and the thought of jumping right back into big-time cooking feels a little ambitious.
Good news - this is the soft landing! A lineup of cozy, low-lift recipes that taste like comfort but won't ask much of you at all. I LOVE easy recipes so much, and these are some of my faves!
This feels like exactly what I need to come out of the bland food haze. Spice-rubbed salmon, creamy coconut curry sauce, and spinach simmered right in. Protein, veg, carbs, flavor, it's got it all!
This is my easy but can-do-it-all dinner. We use this chicken on tacos (see below), in bowls, or just as the main event with some roasted veg and a good sauce.
Aforementioned air fryer chicken gets max-flavored and nestled into tacos with the easiest, punchiest green sauce drizzled all over top. Love this one.
One of my go-to vegetarian meals. All you need is beans, greens, and some enchilada sauce for the filling, and then it's crowned with fresh corn, aji verde, and lots and lots of herbs. So hearty and SO good.
