JULY 2025 Summertime Highs Happy July ๐ I'm sending love from the peak-summer portal! At a time of the year when the sun and water meet for long, languid days, I am reminding myself to slow down, enjoy stillness and presence, and savour every minute of it! I feel so lit up, loving life and honouring the incredible gifts that surround us all, and I have so much gratitude for each and every one of you here with me! My wish for you, as the sun reaches its highest point in the sky, is that you feel energized to spread your warm, abundant light upon your loved ones and communities, too.

ANTIOXIDANTS Antioxidants are natural compounds that play a crucial role in protecting our body's cells. They act as a defense mechanism against naturally-occurring free radical molecules in our bodies, by neutralizing and stabilizing them. When left unstable, free radicals lead to oxidative stress which results in damage to our cells and tissues.
By eating a diet rich in antioxidants (vitamins C and E, beta-carotene, lycopene, polyphenols, anthocyanin, etc.) from a variety of colorful plant foods, you're setting yourself up with a superstar team at the ready to support your body at the cellular level. AMAZING APRICOTS Apricots are abundant in antioxidants like lutein, zeaxanthin, vitamins A, C, and E, and beta-carotene. Here's a hint: you know how they say carrots are good for eyesight? Their orangey glow signals the presence of beta-carotene, similar to apricots, as well as butternut squash and pumpkin. Regular consumption of beta-carotene may help reduce your risk of cataracts, night blindness, and age-related eye diseases. It also supports healthy skin and collagen production! THERE'S MORE! A single cup of apricots contains over 3g of fiber (make sure to keep the skin on!), are incredibly hydrating, perfectly snack-sized, and did I mention totally delicious? | | | | |
Burrata with Fresh Apricots, Hot Honey, and Thyme | | This recipe is the perfect summer appetizer because it takes about 10 minutes to pull together, and requires (almost no) cooking. The spicy hot honey, which can be made ahead, is so delicious with the fresh, sweet fruits, contrasted against the creamy and delicate cheese. The fresh fresh thyme is a must here, adding herbaceous, earthy flavour to round things out, but I think it would also be delish with basil. Serve with your favourite starchy baked good (baguette, warm pita, crackers) and dive in! | | INGREDIENTS ¼ cup honey 1 ½ tsp. crushed chilli flakes ½ tsp. apple cider vinegar 5-6 apricots 250g / 9 oz burrata cheese A few sprigs fresh thyme Flaky salt, as desired DIRECTIONS 1. Place honey in a small saucepan over low heat. Add the crushed chilli flakes and warm for about 5 minutes (do not boil!). Whisk in the apple cider vinegar, then set aside to cool slightly. 2. Slice the apricots into halves, remove the pit, then slice into wedges. Toss with about half of the hot honey. 3. Place the burrata on a serving plate. Scatter the apricots around the cheese and a place a few wedges on top. Sprinkle with thyme leaves and a few extra sprigs for garnish. Pour over the rest of the hot honey. Add flaky salt as desired. This documentary came up on my recommended list on YouTube and I watched immediately (I just love when those algorithms get me). Powerful, poetic, and action-packed, About Damn Time takes viewers on an exhilarating journey through churning rapids and serene starry nights. Along the way, it delves into the rich history and inspiring presence of boatwomen who are reshaping the river-running world for generations to come. I loved every minute of this inspiring short film, and hope you make time to watch it too.

This is a new and delicious discovery: white cacao! Also called cacao blanco, or theobroma bicolor, which comes from the mocambo tree (pataxte), a cousin of the more common cacao tree. You can make chocolate from the seeds of the fruit, similarly to how one would make traditional chocolate. The flavour of this is what makes it so exciting - it is rich and caramel-y, with notes of peanut, coffee, and butterscotch. It is truly so special, and I am stoked to have a new food to eat and experience. If you're in North America, ChocoSol is the brand that I love the most! | | | | | | |
