I always post a new and delicious vegan soup to kick off the start of the year. This mushroom barley soup is cozy and rich with savory umami depth, and is relatively simple to prepare. Just the thing to start 2025!There's lots of pantry staples here--lentils, pearled barley, spices, vegetable stock, miso, and hearty veg like onions, celery and carrots. I love the way that pearled barley "starches up" a soup, making for a super silky broth.I hope that you love this home-y and satifying soup.
