From the end of July into the last weeks of summer, you can usually find me standing over my sink eating a fresh, juicy peach. They are so good that I very rarely do anything with them outside of just eating them fresh. But the one peach must-bake for me every summer is this crunchy sugar-laden peach cobbler. Consider this recipe my love letter to summer!
If You Only Have Frozen Peaches: I have made this with frozen peaches and it works too! Just dump the frozen peaches in the baking dish and pop them in the oven while you mix up your topping. Once you're done mixing the topping, the peaches should be thawed out. Drain them off, return to pan, and mix with sugar, and you're in business. I'd recommend about 32 ounces of frozen peaches for this.
If Your Peaches Aren't Ripe: Pop them in a brown paper bag and fold the opening over to keep it closed. They should be ripe in a day or two!
If You Want To Prep/Make Ahead: I would mix the topping, slice the peaches, and store them separately - then toss the peaches with sugar and top with the topping right before baking. Or you could bake the whole thing in advance and keep it in the fridge for up to 2 days, but it won't be quite as crispy and delicious!
If You Want To Use Other Fruit: I've never made this with completely replacing the peaches, but I would imagine adding in some blueberries or blackberries to the peaches would be delicious!
