I'm not typically one to jump onto trends. Whether it's smoothie bowls, overnight oats, or avocado toast, I'm always late to the party. But this one piqued my interest: 2-Ingredient cottage cheese fudge. As a former picky eater, cottage cheese is still on my list of foods with intimidating textures. Yet I love that it offers so much protein (and calcium). I blend it into the Protein Waffles and Pancakes I eat daily. So I tried that viral cottage cheese fudge recipe as soon as I saw it. The verdict: It tasted too much like cottage cheese and not enough like fudge. So I experimented a bit and landed on something that tastes like an old-school fudgesicle. And made them bite-sized.
