Chocolate Chip Granola, A Trip to Mexico, and Breakfast Tostadas
| Hi reader, It's been a minute! Between the long weekend, a trip to Mexico (more on that below), and all the end-of-the-school-year things, we've been busy! This week I'm sharing my latest favorite Costco buy, a quick recap of a trip to Mexico with friends, and the Egg Tostadas I'm making on repeat since I got home. A New Favorite Granola I got this Purely Elizabeth Vanilla Chocolate Chip Granola at Costco recently and it is SO GOOD. I have tried their other flavors and they're pretty good, but this one is officially my favorite and it has been added to our Costco essentials list! It's also sold at Target (affiliate link). It's my new go-to for cookie bowls! We Went To Mexico! Last week, we went to Mexico with our very good friends (my bestie from college and her husband, our videographer for POY)! ❤️ We stayed at an AMAZING all-inclusive resort in Riviera Maya called Grand Velas and spent three days by the pool, eating amazing food, and just generally enjoying the tropics. Here's a little recap of our trip - it's a super fun destination for a special occasion getaway or trip. And yes, unlike many all-inclusives, the food is actually very good! One of the restaurants was even awarded a Michelin Star this year! Egg Tostadas Forever Inspired by our trip, I feel like I could eat these tostadas for breakfast, lunch, and dinner. They are so easy and are seriously hitting the spot. Also loving the low grocery requirements of this recipe after coming home to a mostly empty fridge. Crunchy, drippy, creamy and satisfying. YUM.
