We are approaching May. And I submit that May is quite possible the busiest month of the whole year (December ain't got nothin' on May).
In order to survive, here are a few of my favorite, EASY dinners that I rely on to feed my hungry family and still hang on to my sanity!
#1 The Best Chicken Quesadillas
Proves a recipe for quesadillas is a good thing!
Absolutely love! I've made this atleast 25 times now. I keep the seasoning mix on hand at all times as my teenagers are now making their own quesadillas. They never fail to remind me to make more of the mix!!! -Anne

#2 The Best Pressure Cooker Mac and Cheese
This recipe is so easy and so tasty that my kids willingly pull out the cheese grater and make it on their own. (Yes, freshly grated cheese makes all the difference!)

I make some variation of these wraps at least weekly. No two versions is every alike - which is the sign of a great base recipe!
