~ Harvest Recipes ~ Here are some family favorites to make for Labor Day (and any day!). Scroll down for photos and links! They're tops for ease and the flavor we barely need to touch with harvest-season ingredients.
Chicken Shawarma Easy Tahini Sauce Beef Kafta Lamb Kofta Burgers Lebanese Potato Salad Tabbouleh Salad Fattoush Salad Crunchy Yogurt Cucumber Salad Nectarine Cobbler (biscuits made with yogurt!) Blueberry Cobbler (the story here is dear to my heart) (the cobber's delicious too)
Chicken Shawarma. Try grilling the marinated chicken thighs without skewering! Then slice. To hold for later, reheat grilled sliced shawarma in a baking dish, covered with foil, with some chicken broth for moisture.
Beef Kafta. Shape on skewers or make patties or logs. Grill, oven, or stovetop. All of the methods and tips are here.
Tahini Sauce. There's a secret to making smooth, lush tahini sauce . . . and it's in every kitchen.
Tabbouleh. Fresh herbs, handful of soaked fine bulgur, tomatoes. Innovate to your heart's content: add avocado, chickpeas, quinoa, cucumber, peppers.
Fattoush. That crunch! From fresh greens (romaine is my favorite), radish, red onion, and of course, pita chips. The vinaigrette is heaven.
Cobbler of all cobblers. Saucy fruit (try peaches--peeled--or nectarines, or blueberries) get their due in this cobbler! The biscuits are so tender.
