Happy April!

I hope this email finds you well, and that you have some fun weekend plans to look forward to. It was a rough week over here in our home, as our whole family was eventually hit by the stomach bug that seems to be sweeping the country. We were basically incapacitated for the better part of the week!

Luckily, we're all feeling SO much better now. I can't wait to start experimenting in the kitchen again!

New Recipes

If you haven't visited my website this week, here's what you might have missed.

 • Air Fryer Baked Potatoes. If you don't want to heat up your whole kitchen by turning on the oven, you can cook potatoes easily in the air fryer! I'll show you my fool-proof method for making sure they perfectly cooked every time.

Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Pesto Pasta Salad. This pasta salad tastes like Spring! It's tossed with an ultra-flavorful dressing, and the leftovers will make an easy packed lunch this week.

Monday: Curry Chicken Soup. I had no idea how popular this soup would become when I first shared it! It's a huge fan favorite, so be sure to try it if you haven't yet! For a vegetarian version, try swapping the chicken for sweet potatoes.

Tuesday: Spring Rolls with Peanut Sauce. Be sure to make these while mango is in season! The fruity addition makes these taste like they came from a restaurant, especially when you serve them with the easy dipping sauce.

Wednesday: Vegetarian Cobb Salad. This is the type of salad that you can serve as a meal, because it's loaded with lots of filling components! I use crispy mushroom bacon to keep this version vegetarian, but feel free to make any swaps you'd like!

Thursday: Best Veggie Burgers. I love making a big batch of these to enjoy for a few days in a row! You can serve them on a bun, or as a salad topper with special sauce.

Friday: Vegan Caesar Salad. This dressing tastes remarkably like the real thing, without using anchovies. I could eat it every week!

Saturday: Day off from cooking! (Leftovers or take-out)
 

Breakfast Ideas
 
Asparagus Frittata. April is peak asparagus season! Try it in this easy baked egg dish for a weekend brunch, or as part of your meal prep routine.

Chocolate Chia Seed Pudding. When you want chocolate for breakfast, but also want to feel full for hours, this is the perfect option! Top with fresh raspberries for a sweet & tart treat.

Spirulina Smoothie. Want to sneak some algae into your life? This is my go-to recipe that makes it actually taste good!

Vegan Bread Pudding. If you want to test a new brunch recipe, try this bread pudding! It's made with an easy coconut-based caramel sauce that comes together really quickly.

Spinach Muffins. This is a favorite for kids, when you want to sneak a little green into their lives. You can't taste the spinach at all!
