Good morning my dear friend! It has turned off chilly here in Carolina this morning so that has afforded me the opportunity to wear my favorite hoody and that makes me happy! It's the little things, right? That said, I did get a bunch of work done at Loaves and Dishes over the past week (thankfully). Some weeks are better than others. This Sweet Thai Chili Sauce is PERFECT on these air fryer wontons (you can also just fry them in a frying pan in some oil). Serve with some Chicken Fried Rice and Yum Yum sauce and your family (and you) will think you are amazing! Then these air fryer breakfast potatoes are also yummy and a quick way to get breakfast off the ground. You could also serve this Pineapple Mango Chicken with the Asian inspired dishes listed above and you wouldn't be wrong. That's for sure! It's an easy one pan dish that will have your tongue wondering what just happened! _____________________ HOT COOKING TIP OF THE WEEK OH Broccoli, what would we do without you? But this week a reader asked me how to get broccoli to cook evenly. She was having trouble because the some of the pieces would still be a bit hard and crispy and some would be mush. The answer? The pieces have to be cut so that they cook evenly and here's how you do it. Remove the florets (trees) from the stalk. Hold the whole thing upside down and start cutting the florets from the base from the side that is closest to you. Cut close to the base to cut down on the amount you throw away. Cut through each floret through the stalk and divide into even pieces. As you reach the crown of the broccoli, leave the florets whole if they are roughly the same size as the ones you cut into quarters. If you want to also eat the stalk, hold the stalk so that it is straight up and down in your hand and then cut down the outer edges of the stalk to remove the woody outer layer of the stalk. Once all of the woody exterior is removed, cut into disks or planks that are roughly 1/4 to 1/2 inch thick. Add all of the broccoli to the pan at once. Do not start cooking some of the broccoli while you are cutting the remainder of the broccoli. __________________________ THREE LITTLE THINGS I"m trying to be more thankful for the day to day things in my life and I share some of those small things here with you to help you remember too.
