The Best Ways to Make Taco Night Super Easy!

We all have our "go-to" recipes that we make every week. In fact, no matter how hard I try to expand my recipe horizons, I always go back to my family favorites. Why?

Because it's easy and I know everyone will eat it. During the week, I have no desire to make life any harder than it needs to be.

My ultimate "go-to" recipe is tacos!

Tacos are easy to make on their own, but preparing taco meat ahead of time makes taco night that much easier. I can have dinner ready within 15 minutes when the taco meat is already cooked.

First, let's start with my favorite taco meat recipes.

1lb of ground beef or ground turkey with my homemade taco seasoning. This seasoning is THE BEST and will bring your tacos to the next level.

This taco recipe is low fat but super juicy, spicy, and flavorful. It's also a great recipe to save for the weekend.

Taco meal prep tips!

  • First, I cook the taco meat over the weekend and store it in an airtight glass container in the refrigerator. You can also freeze the taco meat if you're not planning on eating it until later in the week.
  • Then I will have all the condiments and other ingredients ready for taco night. For example, shells or tortillas, salsa, cheese, lettuce, jalapeños, and whatever else I need.
  • All I need to do on taco night is warm up the meat and cook the shells. Super easy

Another make-ahead idea is to put together taco freezer kits.

This is SOOOOOO helpful, especially when you are in a busy time of the year.

Here's what I do:

  1. Cook the taco meat and let it cool. It's helpful to cook the meat the day before and let it cool in the fridge. You don't want to put hot beef or turkey taco meat in the freezer because it will form ice crystals.
  2. After the taco meat cools, place it into a quart-size bag.
  3. Then place that bag into a gallon-sized freezer bag with tortillas and cheese to make a kit.
  4. Store the kits in the freezer.
  5. Take it out to thaw overnight in the refrigerator when ready to eat. Remove the taco meat from the bag and warm up in the microwave or stovetop.
  6. Put together your tacos.

Bonus Tip

Here's another tip to make taco night stretch a little. If you have extra taco meat or make a little extra, you can use it for a taco pizza later that week or even make some taco mason jar salads for lunch.
