This one pot dinner is a flavourful pivot away from all of the holiday foods that have been abounding lately. The slightly unexpected combination of ground cardamom, chili, crushed tomatoes, garlic, and lime is one of my favourites--inspired by an amazing sweet potato recipe from Otolenghi's Flavour Cookbook.
It all comes together in this cozy skillet meal that I serve topped with a tangy vegan lime yogurt sauce. Every bite is nutty, spicy, tangy, fragrant, creamy, and just plain delicious. I use pearled farro in this recipe to keep the cook time down to 30 minutes since I know that a lot of us are short on time as the Winter holidays arrive.
