Hello reader Sunshine at last! If you're anything like me, you'll be gasping with the heat already and looking for ways to cool down. But I know many people have been craving warmer weather, so there's no pleasing all folks all of the time. I hope, wherever you are, you've got the weather that suits you best. The upside is that our courgette (zucchini) plants are now producing - prolifically. If you've ever grown courgettes, you'll know exactly what I mean when I say glut. Yes, we have a glut of courgettes already. I'm not complaining though, I love to cook with courgettes, they're just so easy to prepare. Every year I try to come up with at least one new courgette recipe so that we don't get bored. This year, it's courgettes with za'atar and yoghurt. It's ever so simple to make and it's really tasty. You can eat it as a side dish or just have it with crusty bread or warm pittas for a light lunch or supper. If you're vegan or trying to cut out dairy, go with a lemony hummus rather than yoghurt. I've tried it and it works very well. But I don't think vegan yoghurt would cut it somehow. We've also had courgette strata a couple of times, made with the last of the goose eggs that CT bought home from work. And courgette tempeh hash (vegan). I'm not bored with any of these - yet! Before the weather got too hot for baking, I made a batch of these roasted strawberry chocolate cupcakes. It was an old post that was very much in need of updating. It reminded me of just how effective roasting strawberries is for intensifying their flavour.
