Hello reader Woohoo! It's July which means I've just done the last two days at my other work for the summer. AND today is my birthday so we're having a day out. Can't wait. When we get home, there's a tub of delicious strawberry ice cream in the freezer to enjoy. Just crossing fingers the weather holds up. So this super easy recipe for strawberry ice cream is a no-churn one. This means if you don't have an ice cream maker, that's absolutely fine. If you do have one, you don't need it. Just think juicy ripe summer strawberries and cream whizzed together and frozen. It's really good. There's a little more to it than that, of course, but not much. I've given two variations. The first includes a little balsamic vinegar. If you're not used to this with strawberries, don't panic. You can't really taste it, but it somehow brings out the strawberry flavour and I highly recommend it. The other one is adding a little rose syrup. The floral notes of rose go really well with strawberries. Most summer fruit in fact. I'll keep this newsletter even shorter and sweeter this week, other than to say it's strawberries and cream all the way. My strawberry cream cakes are proving popular this week. They're perfect for picnics. I apologise if you're vegan and there's not much on offer this week, but this vegan chocolate oat truffle recipe is also popular. It's perhaps not as seasonal as strawberries, but the truffles are delicious and healthy too.
