Really good Fish Cakes!


There are good fish cakes...... and then there are great fish cakes! No prizes for guessing which category these ones fall in...

Today's recipe is dedicated to fellow Sydney-siders who woke up to the news of our 5 week lockdown being extended for another 4 weeks. 😔 You can make this with pretty much any fish - fresh, frozen, white fish, salmon - even canned fish. Take a rummage through your freezer!

As for our current situation? I choose to take a "glass is half full" approach to life, as do many of my friends, with jokes such as this flying around various WhatsApp threads:
