....this isn't just gluten free banana bread. Nope! It's Gluten Free Banana Bread with Espresso Mascarpone, aka fancy banana bread!
This recipe is inspired by Two Hands, a restaurant located in NYC and Austin, TX. I was recently in Austin, tried the banana bread and immediately knew that I wanted to *try* to recreate it.
The recipe uses gluten free all purpose flour, so it has the same texture as your favorite banana recipe. The whipped mascarpone really takes it to the next level, and the toasted buckwheat helps add some incredible texture as well. I hope you give this one a try!
