A new month means a new email-only recipe just for YOU! That's right -- this Lentil Sloppy Joe's recipe won't be hitting the blog. Instead, I'm providing it below as a thank you for subscribing and being here. I figured with the 4th coming up, I'd send this email out a little bit earlier in case you're in need of a last minute, vegan/gluten free 4th of July recipe!
Ok so, if you know me at all, you know that lentils are one of my favorite ways to enjoy a meatless meal. I'm obsessed (and I know you are too) with my lentil bolognese because it's hearty and delicious. Though I eat meat, I try to incorporate 1-2 meatless dinners into my weekly routine, and these lentil sloppy joe's are the perfect summertime plant-based recipe!

LENTIL SLOPPY JOE'S
Serves: 6
Ingredients:
1 cup uncooked lentils (preferably brown or green)
2 1/2 cups water
1 tbsp olive oil
1 green bell pepper, diced with seeds removed
1/2 cup yellow onion, diced
2 garlic cloves, minced
2 cups canned crushed tomatoes OR canned tomato sauce (either works just fine! If using tomato sauce, try to find plain sauce vs. a sauce with Italian spices in it)
3 tbsp tomato paste
3 tbsp maple syrup
2 tsp chili powder
1 tsp smoked paprika
1 tsp oregano
1/2 tsp salt, plus more to taste
Directions:
1. Add the lentils and water to a large saucepan, then bring then to a boil. Place a lid on top, reduce heat to a simmer and cook the lentils until they've absorbed the water and they're soft, approximately 20 minutes.
2. Next, heat the olive oil in a large skillet over medium heat and add the bell pepper and onion; sauté until soft, 6-7 minutes. Then, add the garlic and sauté for 1 more minute.
3. Add the cooked lentils, crushed tomatoes, tomato paste, maple syrup, and all of the spices and stir to combine. Place a lid on the skillet, reduce the heat for medium-low and simmer the mixture for about 10 minutes, stirring occasionally until it thickens. Adjust salt to taste.
4. Serve the same way you would regular sloppy joe's -- on a burger bun! Or, eat it as a meal with a side salad and/or roasted vegetables.
