Vegetables are the heart of summer for us here at Kitchn, from our summer kickoff package, Eat More Plants (the editorial highlight of my year!), to our now-traditional July theme: Vegetables First. I'm here for the color, the life, and the crunch of vegetables — and this month Kitchn has loads of fresh veg in just the ways you want to eat them. I won't go on (after all, it's a holiday, and I hope you're reading this at a picnic table or at the pool). Let me get right to it: My top 10 vegetable countdown for this month — the summer veg that really makes this hot weather worth it.
10. The best tomato salad - Don't sleep on the very best tomato salad we know. 9. Cucumber salad, plus avocados - We know you love cucumber salads and this is the one to make now. 8. A grain bowl big enough for a party - Love this oversized grain platter packed with every pretty veggie. 7. Classic French ratatouille - Easy French comfort food. 6. Burrata bar (pictured above) - A genius idea from Shelly Westerhausen Worcel; every veg is better with burrata! 5. Grilled cabbage with spicy sauce - My all-time favorite grilled veggie. 4. Grace's ultimate summer salad - This one has it all: little lettuces, peaches, tomatoes, feta, and so many other good things. 3. Zucchini bread, grandma-style - I look forward to summer zucchini bread all year long. 2. The ultimate summer pizza - Christine showed us how to overcome the pitfalls of veggie pizza. 1. Butter bath corn - Was there any other choice for the top pick? It's BUTTER BATH CORN season, y'all.
And then, just since it's been a while since I emptied out my saved list, here are 11 pretty and delicious things that might bring you some joy this long summer weekend.
