FSIS Notice 28-21 This notice announces a change in the regulations to allow collection of clotted blood for human food.  It also provides instructions to inspection program personnel (IPP) on how to verify that edible blood is collected and handled in a manner to be fit for use in human food.  FSIS issued similar instructions in FSIS Notice 36-20 which expires August 1, 2021.
