Cucumber Kimchi + Ssambap + Beef Radish Soup + How to Ripen Kimchi

Happy Sunday!!

Well.. I kinda unexpectedly had another week of semi-vacation at a friend's winery in Paso Robles, CA the last few days and if you have been following me, you would have seen all the IG stories. (You need to follow me IG @kimchimari if you aren't!)  But just in case you haven't, here's a quick summary - I had the great fortune of house, chicken and cat sitting for the owners at Vino Vargas winery!

 

I have always wanted to live on a farm so taking care of chickens, cats and the veggie garden they had at the winery was a dream come true!😍 We also had their wonderful wines to taste and enjoy everyday. 

 

If you haven't visited Paso Robles wineries, you are missing out! And be sure to visit Vino Vargas winery and tell them JinJoo sent you! (no, I don't get any commission from this..lol).

 

I am always looking for wines that pairs well with Korean food and my latest favorite Vargas wine is the Rosé! I was surprised how well it goes with Gochujang dishes like Tteokbokki. It just opens up the spiciness in your mouth while still helping to smooth out any sharp taste of it.

 

In the garden, cucumbers are totally in season now so I will share some Cucumber recipes with you. Koreans really know how to enjoy cucumbers so hope you find these recipes fun and delicious!

VEGAN CUCUMBER KIMCHI

I shared on my IG story about how I decided to make Cucumber kimchi (Oi Sobaegi) for my winery owner friends with the cucumbers from their garden. And I just happened to have some good Korean sea salt and gochukaru (chili pepper powder) so it worked out!! This is a great way to use up a lot of cucumbers if you have a lot of them from your garden.

Have you ever had a cold Korean Cucumber Soup (Oi Naeng Guk)? It is the PERFECT food to cool off on a hot summer day. It's cold, tangy, slightly sweet and soo refreshing! Vegan and GF too!

Did you know you could cook cucumbers? If you salt cucumbers and lightly sautee it, you get a crunchy and yummy cucumber side dish called Oi Namul. Hope you try it!

Koreans love having Ssam (lettuce wraps) in the summer but we love to wrap rice in many other leaves other than lettuce. We use Perilla, steamed zucchini leaves, kale, collard greens, green cabbage and more. Ssambap means wrap + rice and here are 3 recipes that I shared on how to make this yummy dish.

HOW TO RIPEN KIMCHI

Can Kimchi be further ripened on your counter after you put it in the fridge already? YES!! 

This is one of the questions I get asked a lot..

Kimchi will ripen in the fridge but it's best to jump start it by letting it ripen at room temp for a while. It's pretty much similar to jump starting sourdough starters by letting it come alive in a warm place. 

So.. did you know I drew this flowchart to help people eat Kimchi the most delicious way? Ripening kimchi properly is the most important thing about eating Kimchi. Any kimchi will not taste good if they are not fully ripened no matter how good the recipe is.
