Good morning you! Happy Monday! I know we don't usually speak on Mondays but this is an exception. Everyone has a ton of things to do on Mondays and no one really wants to think about dinner or even how we are going to get through the week this week (that's where I am at the moment). But I know you can do it. So can I. We've done a bunch of hard stuff in the past and there isn't anything we can't tackle. Right? That's especially true if you make a few plans and write them down. That's where I am at the moment, me and my legal pad trying to make sure I've got everything planned, packed, ready and paid for. In the moment though, let's get on with the food and make those plans, shall we? The cool part is that this week, the recipes are part of the HOT COOKING TIP because once you start thinking in this manner for meals, you'll be putting supper on the table in no time. It's hot. So very hot. No one feels like a big ol hot heavy meal (although, I have to admit, I ate a steak last night and that was about the best meal I've had in weeks, seriously). What can we do instead? Of course, salads. I get sick of salads. I know you do too. But I'm going out on a limb here and I'm going to suggest that you try something new. Have you ever watched Jamie Oliver on TV? I've tried a few of his recipes and frankly, I've never had a lot of luck with his recipes BUT I LOVE serving dinner the way he does. Set the food out on a big platter or large cutting board and let everyone serve themselves from that platter. Serve sauces and any runny items in small bowls to the individuals or as a dip on the platter. The results can be really beautiful and its a great way to sneak in some healthy veggies too! (Plus, less dishes to wash). For example, you could make my Fettuccini Al Fredo in this manner by serving a platter with a bed of noodles, arrange some chicken, other meat or tofu around the edges and cover the top of the noodles with grilled veggies and then serve the sauce on the side. You could grill Salmon and Green Beans in foil packets on the grill and then arrange the packets on the platter around a bed of rice and let everyone serve themselves from the platter. Add some other veggies and a sauce and whew, delicious! Another way to serve a family style platter meal like this would be to provide a pool of chori pollo and surround it with rice, beans, chips, guacamole, lettuce and tomato. Maybe offer tortillas as well. Plus, offer the cheese on the side and allow everyone to determine their own level of cheesiness. YUM! (yum yum sauce works great with this dish, even if its from a different style of cooking) Along a similar theme is a big platter of nachos. It doesn't have to be unhealthy, just top with healthy toppings like veggies and ground turkey made with taco seasoning if you want. Offer sour cream on the side and melt a little shredded cheese over the top. Right now, my plans are to lean heavily into the upcoming end of year holidays because they will be upon us in just no time at all. You'll be wanting recipes for roasted turkey breasts, ham, pineapple upside down cakes etc. and you'll want to know how to do it with the least fuss and most yummy goodness. Those things are my forte and I'll be sharing my secrets with you. For now though, I've got a ton to do before the end of the week and I've got to run.
