Hello Dear Friend! I hope this email finds you well and ready for a rootin tootin three day weekend! In speaking with some friends, I understand that there are plans afoot for cookouts, boat rides, holidays at the beach and time too stretch out in a hammock. Perhaps it's time for some summery, celebratory, fun in the sun foods? I hope so! We could do some delicious jerk chicken wings! (and if you don't have a smoker, no problem, just follow the directions and throw them on the grill instead). Of course, My mother in law's Banana Pudding is always a winner on a hot July day (it's not the baked kind of banana pudding so, I'm sorry if that isn't real banana pudding to you, it's what our clan likes). How about the massively decadent but hardly any trouble bacon wrapped hot dog? I know, that is just WRONG, but still, so good. Of course, always a hit at this time of the year, Vidalia Onions featured in these now famous Tennessee Onions (I know Vidalias are from Georgia, there's a story behind it, but if you just want the onion recipe, click "jump to recipe" when you get to the page). If you are a fan of pasta salad, here's a sure fire way to throw together the perfect pasta salad with what you've got, just pick one from each group. Don't forget the Southern Sweet Tea and some fresh squeezed Lemonade to boot. __________________________ HOT COOKING TIP OF THE WEEK Have you ever zested a lemon with plans to use the juice really soon and put the lemon in the fridge and totally forgot about it? I have. That poor shriveled lump. When I found it, it was almost unrecognizable and I had to really ponder what it was. I mean, I could tell it had been a lemon, but I forgot how it got into such a predicament. If you want to hang on to your lemon a little longer after zesting and aren't quite ready to juice it, just put it in a zip top style plastic bag or wrap it in plastic wrap until you are ready to use it. Without the skin, it is no match for the dehydrating power of your refrigerator but the plastic gives it a fighting chance, at least for a week or so. Then, you can use it for lemon chicken piccata or some other yummy dish. ___________________________ THREE LITTLE THINGS I'm trying to be more grateful in my day to day life, especially for the little things and sharing some of those here in hopes that you'll remember to be more thankful too.
___________________________ A FINAL THOUGHT Was just thinking about how a friend of my daughter's mom used to say, "be sweet and be smart now, you hear?" whenever I would pick her daughter up for an afternoon play date. Back then, I had never heard of anyone telling a child to be "smart", although I understand the sentiment. I catch myself saying "be smart" to my own children and grandchildren now and know it's from hearing her say it so many years ago. Isn't it funny how we adopt each other's ways? I guess we pick up bad habits from one another as well. Maybe I should be more mindful of this when my own bad habits are on full display in front of others. I'm gonna pay a little more attention to that. I guess I need to "be smart". Till next Friday, God willing and the creeks don't rise.
