Our family recently celebrated Gwen's 3rd birthday (🥳🎈🥺) and spent some time looking at pictures from the day she was born. She was so precious and tiny...and so was I! 🤣 I don't mean to sound vain, but since I had gestational diabetes during my pregnancy with her, and was eating super fresh and low carb, I was the healthiest I'd ever been.
Although I did swear off salads for several months after Gwen was born, during my pregnancy I learned that eating low carb doesn't have to mean eating plain vegetables, simple scrambled eggs, or sticks of string cheese.
